Quinoa Arugula Salad

Ingredients:

1 Bag Baby arugula

2 Cups Prepared Quinoa

1 Chopped Cucumber

1 Diced Roma Tomato

1/4 Cup Dried Cherries

1 Handful Toasted Pine Nuts

1 Chopped Green Onion

Vinaigrette:

2 Cloves Fresh Garlic Minced

1 Tablespoon Fresh Thyme

1 Tablespoon Pink Himalayan Pink Salt

1 Teaspoon Crushed Red Pepper

1/4 Cup Olive oil

1/4 Cup White Vinegar

1/2 Small Lemon Squeezed



My favorite thing to do is throwing random things together in the kitchen that give me my signature Salty/Sweet flavor! With this salad it is SO quick and easy that I usually throw it together for an easy lunch, or a healthy dinner by adding a protein like chicken or shrimp!


Preparation:


In a large mixing bowl combine both baby arugula and pre-made quinoa. I like to mix these two first because they tend to clump together and we want to make sure that they are evenly distributed.


After it is mixed together evenly, go ahead and add in the cucumber, tomato, and dried cherries and set to the side.


When I make this recipe I usually have the vinaigrette made ahead of time and leave it in the refrigerator to chill, but if you don't have the time to do that this still works out great making it at the same time!


For the vinaigrette you just need to combine all the ingredients in a small bowl and set to the side.


Once the vinaigrette is done, go ahead and pour the mixture onto the prepared salad and toss to coat everything evenly. Once everything is coated, serve and garnish to your liking with both the green onion and pine nuts!
